Today was amazing!!! El Conquistador has SO much to do, its literally never ending. Our day started with a delicious buffet breakfast where we got to try the resort’s signiture pina colada french toast- DELICIOUS!!
Then we burned some of the calories we had eaten off on the foot golf course. Yes, it’s a thing and you need to try it. I LOVED it and so did Ella. I can’t wait to find a course near home actually so I can take the boys.

While out on the course we also stopped by the resorts garden facilities. Don’t you love hotel’s that utilize on site gardens? At El Conquistador not only do they use the plants in their restaurants but they also educate children on gardening and conservation in their kids club program as well.
Next, up we hopped on the ferry and headed over to Palomino Island. Ella had a blast testing out their adorable giant floats, we went kayaking and saw a sting ray, painted coconuts and did a build a raft challenge on the beach. I was amazed at how much there was to do on the island. We didn’t even touch half of it. Oh, well guess we have to come back ((wink… wink)).
After our Palomino adventures we headed back to the resort where we enjoyed the Coqui Water Park. We taste tested delicious the traditional “piragua” which is basically a Puerto Rican snow cone. Mine was spiked with rum so double bonus!!! That came in handy when Ella forced me to go down the super steep 40 foot waterslide- ha!
With all the amazing activities we checked out we decided we better squeeze in a nap before dinner. That turned out to be exactly what we needed. We woke up refreshed and ready for a wonderful evening.
We dined at Stingray Cafe and enjoyed some delicious cuisine. Their appetizer sampler was made up of tasty tuna tartare, calamari, a garlicky shrimp atop risotto and a pumpkin soup. For my main course I chose the Seseame Crusted Tuna and it was cooked to perfection. We also tried a bite of their mufongo inspired risotto which was super tasty. I am seriously going to crave that taste when we get back home. We ended the night with S’mores Souffles. Clearly, it was a great day!!!
I cannot wait to tell you more about this place. Absolute gem for families and since English is widely spoken, you don’t need a passport and they accept the American dollar its the easiest international experience for families. If you haven’t checked out El Conquistador- you really need to!
